Domaine Bachey-Legros et Fils
Varietal: 100% Chardonnay
Wine Making: The pressing is light and controlled by pneumatic press. The alcoholic fermentation is done at low temperature on fine lees, in barrels. A lot of attention to the quality of the lees. They are the ones that will give the roundness and the complexity of the aromas that we are looking for. At the embedment, we control that they are sufficiently present. Then aging in oak barrels lasts from 12 to 15 months depending on the vintage, with regular stirring until the malolactic fermentation.
In balance, this great aromatic complexity, combined with a refined style, requires delicacy but also rich.
Food Pairing: As comfortable on a nice fowl in sauce as on a veal with mushrooms, Puligny-Montrachet will be admirable with foie gras, lobster and lobster, grilled sea fish and pan fried will thank him for his great distinction .
On the cheese plate he looks for the company of goats and reblochon as well as soft pasta with a bloomy rind like brie de Meaux.
