Domaine Auvigue “Vieilles Vignes”
Varietal: 100% Chardonnay
Wine Making: Grapes are Immediately pressed by pneumatic press, the juice then goes through static settling and is matured in oak barrels for 1 year to start alcoholic fermentation. This wine is regularly stirred during the winter until the end of fermentation. Vinified in French oak barrels during 8 months. malolactic fermentation of approximately 70%,is done in order to keep a good acidity level.
It is then fined and filtered before bottling.
Nose – Brioched with hints of toast and vanilla and notes of vine peaches
Mouth – The attack is round and supple, the tannins lightly truffled and the finish velvety and structured with a lovely acidity.
Food Pairing: chicken with morel sauce, veal chops, warm oysters with cream and leek sauce, lasagna with tomato cream sauce.
