Varietal: Syrah, Grenache noir, Mourvèdre
Wine Making: Manual harvesting of the harvest at optimal maturity with sorting at the plot. Traditional vinification with vatting 25 to 30 days long. Aging 12 months in oak barrels of one or two wines. Terroir Comes from plots located on the soil of Cazelles whose soil consists mainly of limestone chips.
Tasting Notes:
Color – garnet color and violet hues
Nose – black berries (blackberry, blackcurrant), toasted and balsamic (lavender, rosemary, rockrose).
Mouth – very dynamic on firm tannins, melted, very grainy. Long persistent, aromatic finish
Food Pairing: Red meat and game and cheeses.
